While I understand what you mean regarding being unable to play in your preferred language, I'd like to try and explain why Italian localization isn't included.
I mean obviously, we can't support to translate the game in every single language so the choice was made to make the game available in English, French, German, Polish, Russian, Spanish, Brazilian Portuguese, Korean and Chinese (both simplified and traditional).
This choice is, I believe (but don't consider it fact since it's mostly an educated guess), motivated by a market analysis to determine what languages would allow to reach the widest player-base while remaining within the allocated budget. A line has to be drawn somewhere, if localizing to a new language potentially costs more than what it's estimated to bring in, chances are it won't make the cut.
That's because localizing a game isn't free. It has an upfront cost, but also a maintenance cost since every time we add a line to the game it needs to be translated in every supported language. Every time we change a word or a description it has to be re-translated in every supported language.
However, the game is pretty moddable so while an official localization is rather unlikely if you ask me (note that I don't say it will never happen because I don't know these things for sure since they're out of my area of expertise) the Italian community can come up with an Italian translation mod. A lot of games have translation mods on their Workshops and we encourage communities to make the translations we aren't able to provide officially.
