Other than that, you can try to counquer the areas spreading the infulence quickly after you go to war with them.
In your case it sound like the other player have been allowed to spread their infulence a bit to far. To counter this in new games you can boost your own infulence producing it near boarders (The star resource) to counter the enemy, or by harrassing the enemy before they can spread their infulence past your systems.
What happens when the Unfallen go Roundup Ready?
You made the same mistake I made when dealing with the Unfallen for the first time. You hear they're the passive, diplomatic faction and think you can count on them being decent allies or at least being benign compared to other threats in the galaxy. The truth is they're possible the single worst faction you can ever make peace with. Don't ever sign any treaty with them.
Everything about their playstyle is geared toward acquiring "friends" and then betraying said friends the moment they can snake their vines all across their empire and jack all their systems through influence buy the moment the alliance falls apart. Thus, signing a peace with them is akin to Troy accepting a trojan horse into their gates.
Best way to deal with them is to refuse to play that game. Close your borders to them as soon as you can so their vine ships can't fly through your influence, and then declare war and exterminate this faction as soon as it becomes convenient. That's all they frankly deserve.
