Anyway you will key a key when you purchase it. So you can activate it in Mogstation whenever you want.

Great with this deal though, just got into this game and when i hit level 50 i get the expansion pack for this cheep.

not sure what you think happens when you download expansions, but shadowbringers adds content that is mostly only available after completing the ARR story. I'm currently just reaching the beginning of Heavensward and am level 55 with my main class, that is, I haven't even started the level 50-60 main quest line and I'm already halfway there through natural progression.
The new classes unlock at level 50, but you cannot acquire them until you get one of the original classes to level 50, so while picking up a level 50 class and trying to play it can be very daunting, it won't affect your experience with any of the other classes.
yeah you have to enter it on mogstation iirc, steam gives you the key and then you have to go to your ffxiv account in a browser to link the expansion + play it.
You don't get boosted to max level when you activate the expansions.
