I believe it auto selects which Region you are currently in when you buy the game. You should then get a corresponding Serial Number to enter into Mogstation when you create your account.

If you buy or are gifted from the NA steam store, it's an NA key. If you buy from the EU it's a PAL key.

The trial lets you select... that's all I know.
Either way you should be fine unless you want to play in NA or ♥♥♥ from EU.

You can choose a shard set to play on before character creation - I think 'Chaos' is EU - But it does tell you when making the choice.

The game you buy will get you a CD-key that's region-locked, i.e. EU, NA or JPN. But this region-lock only applies as far as adding the CD-key to a a SE account.

i.e. you can only link/register/add a NA CD-key to a NA SE account. Likewise for EU/JPN.

So if you are in Germany, buying the game from Steam will get you an EU CD-key. You then have to make or have a SE account whose region is the EU as well. If you friend from New York gifts you the game, then you have a NA CD-key and must have a NA SE account to use it.

BUT... as far as choosing what servers you can play on, you may choose ANY server, ANYWHERE. No restrictions. The JPN datacenter's in Tokyo, the EU/NA datacenter is in Montreal, Canada.
