While it's possible to solo a vast majority of the quests there's a massive amount of team-based content that the game doesn't even allow you to attempt solo.
The party-based content uses something called the "duty finder" you simply select which dungeon/guildhest/boss you want to do and the game finds you a party and starts the instance, the duty finder is cross-server too so even if you play at odd times there's usually plenty of people online.
Can you save the game mid-dungeon, or are you committed to playing for the next few hours once you go in?
You're committed. Dungeons have a time limit, the majority of them being 90 minutes. However, in most cases, an average group will finish in around 30.

Um.... you are aware this is an MMO, yeah?
Having progress saved mid-dungeon isn't necessarily a strange thing for an MMO. World of Warcraft saved progression in raid dungeons until the weekly reset, for example.
The very last dungeon saves your progress over each of its five instances over the week until reset, though I'm not aware of any other dungeon that does that, anyone feel free to correct me if I'm wrong though.
But yeah, most dungeons are on a 90 minute time limit with the average clear time being 30 minutes, so you're commited but you aren't there for ages.
And yes, I know most MMOs have instances which are all or nothing, but I was still curious.
Yes you can, only for Binding Coil of Bahamut. You get to save your Progression (Currently 5 Turns) and even progression within T1. The other 4 Turns are either you lose or you win.
Progression reset every week though. Only because Progression saved is also Progression locked, you can't go backward in term of Coil Progression. This however is getting lifted in the next major patch for T1-5.
