On gear, jobs in the same category mostly share the same with the difference being the weapon. Armor worn by a gladiator can be set to be used if you switch to a marauder for example. Levels 1-50 will be the most frustrating gear wise as this is the period where gear is gold intensive. By the time you reach level 50 and start getting Allagan Tomestone of Poetics, your gear needs will last for at least 10 levels. You can still purchase gear yourself or craft it if you have the available jobs for it, but frankly gear bought with Poetics will get you through pretty much everything.
As to what class to start, it depends on what you want to play. You will be restricted to the base classes of Gladiator, Marauder, Arcanist, Archer, Lancer, Pugilist, Thaumaturge and Conjurer until around level 30 when you unlock the job upgrades. Other specialty jobs can be unlocked but these are dependent on leveling up one of the base classes first to level 50 (and higher for some) while advancing the main story quest. As to what to start with first depends on what you like to play. I can say, healer classes are a bit more difficult to play as at first until you get how to balance healing party members and attacking. Remember this on healers; unlike other MMO's the FF14 healers do not stand around and just heal. You are expected to be contributing some in boss fights while also keeping party members alive.
In fact I dont recommend healer at all as their gameplay in early levels is just mindnumb spam 1 button nonstop for damage.
And no you don't need much to swap jobs later on, you can carry all the gear you need for all jobs in your char at all times, and you will get a lot of gear from dungeons etc, so you can easily try new stuff.
Regarding stats, is not a thing in this game unless you are min maxxing for raids, so don't worry about it at all before max lvl.
I'd suggest lancer, dragoon for melee since its straight, or arcanist for magic ranged since it gets most of its kit at lvl 50.
Well since you're brand new, Lancer. They're incredibly simplistic to play. They pump out a ton of damage and offer tons of mobility tools to ease you into the long GCD compared to other MMOs.
That being said however there is no 'wrong' choice. Every class is perfectly capable of clearing all content assuming you take the time to learn your skills and exactly what they do. In the end it comes down to what you feel like playing or which class appeals to you most from an aesthetic perspective. I myself started as a Lancer/dragon but a friend convinced me to try out the tank classes and despite my nervousness about tanking in MMO's it became my favourite role rather quickly. The only tank class I personally don't like playing is Paladin but that's just because I find their story boring af, which is of course my opinion so take that with a grain of salt.
Worst thing is utilizing sockets and replacing sockets, if you min-max. If not a min maxer, then disregard this.
Healing: PERSONALLY I would go for Scholar, but I am biased as it is my main.
DPS: Lancer/Dragoon for Melee, Black Mage for Ranged. I think both have a slow enough start to get you acclimated, but both grow into rather powerful jobs in the right hands.
