If you wait until after the 2nd of July this year, they will update the Complete Edition to include Dawntrail. When exactly though, is anyone's guess, but usually not long after the newest DLC it is updated.
All *previous DLC are included, hence the Complete Edition.
You are not going thru all the story content in a month unless you REALLY, REALLY skip text and cutscenes hard.
Truth be told, you probably will still have a lot to do in the free trial when the xpac hits, then you can get the complete ed there and get everything at once in one big chonky package.
Unless you no life this game nearly 24/7.

If you start on free trial here at steam and buy the game on steam you can keep your progress from free trial into the full game.
Free trial is limitless time access, meaning it will remain FREE until you add a game license to your SE account.
If you BUY the game you LOSE FREE trial status.
The moment you add a license key to your SE account you're not longer a free trial acc and therefore have to pay a sub to keep playing once the 30 free days of game time included with the first purchase end up.
You can pay your sub with steam wallet.
Therefore: play the free trial, see if you like the game, once you're finished with all it has to offer, AND ITS A LOT!, then consider buying the game via steam, If you buy a PC license from SE own store or elsewhere, it won't allow you to buy upgrades via steam, steam and PC are two different licenses in SE head.

FYI: It took me a year and 2 months of try-harding only the MSG to get from ARR to finishing Endwalker. I even skipped most of the blue quests along the way.
Secondly: If you buy the complete edition it gives you EVERY EXPANSION UP TO ENDWALKER. Do *not* listen to these people saying it doesn't.
