To give you some idea of what it'll be like, I went from nuking for 250-300ish on my White Mage to doing 3 or 4x that. And my HP now sits at around 6k, with that 120 rated tomestone gear (plus a crafted level 50 staff and ring). That's what happens when all your gear gives stats in the 20-30s instead of 8 range ;)
You can get some of the idea of the progression you'll be skipping from the post ARR MSQ quests. Watch the stats climb as the item rating goes up on the rewards with each batch (each one tied to a content patch). Of course, you won't use most of that gear, because you'll have better.
For the old endgame levels, there's no longer any gradual progression through those gear levels, you can just go straight for the best available, so if you have the gear available to use your stats get a huge increase.
Basically done this way so that the devs can assume all players start at a given power level (that 6k hp) rather than having to design content in mind for both people with 2k and 6k hp.
I don't think you have access to many roulettes yet, but trial, MSQ, 50/60/70, and alliance roulettes can all be unlocked at level 50.
When you finish the 2 level 50 Main Story Dungeons you'll have enough poetics to buy a ilvl110-120 weapon for you're class.
Progressing through the Main Story will grant much stronger ilvl gear.
You don't need to farm or buy any other gear outside of what the story gives you.
This isn't necessarily true.
I don't recall if I had issues with needing ilvl for MSQ for level 50 content, but I know I needed to get gear with higher ilvl for the last part of Shadowbringers.
Which if you do the daily roulettes at least with some regularity, shouldn't be an issue. And it typically only takes a day or two if you don't.
The level 50 between ARR and first expansion quests do provide some 110ish ones (with nice particle effects), but you won't be able to get them for all the classes (since there are like 3 quests that provide weapons, each one with a subset of the jobs). And crafters can make 110-115 iLevel ones for level 50 as well. I'm currently using a 115 HQ staff I crafted as a white mage, and 110s for Dragoon, Summoner, and Scholar.

You can grab it as soon as you finish 2.0 or wait until the MSQ takes you there after a few quests.
As for the rest of the gear you can just use what the MSQ gives you, you don't NEED to grind/farm or buy gear but you can if you decide to.
You can do whole Shadowbringers pretty much with ilvl 400 from Stormblood. Think there is some specific places you cant enter like the Nier raid
Edit: Oops, nope, they're 120. It's the soldiery ones that are 100. Groovy.
I had to do some roulettes to get gear in order to get to the ilvl required for the end dungeons and trials. I haven't unlocked any raids for Shadowbringers.

Grand Cosmos requires 430
Anamnesis Anyder requires 440
It's not a huge grind to get to 440 ilvl. I really only did Level 50/60/70 dungeons, leveling, trials, and MSQ roulette. And it only took me a day or two to unlock each of the above "milestones". Probably just a day each if I had done the raiding roulettes.
