most of what you're gathering/crafting can still be purchased off of vendors at that level so either you have to sell at lower than the vendor, or count on idiot sales
if you mouse over an object for the tooltip, 'shop selling price' will tell you how much a given thing sells for from the vendor
as 'shop selling price: none' appears more often, then you'll be able to start selling things for profit

unfortunately, outside of the timed gathering nodes (and fishing), you're not going to find much profit as a low level gatherer (crafter has better luck, in that you can make HQ leveling gear and people leveling alt jobs will buy it -- if you can make it, it will sell)
the way things work now, a level 90 gatherer can go out and grab a couple of hundred of a given low level material in a matter of minutes -- so if you charge anything that would make you money, anybody maxed out (and we're in downtime right before an expansion) is just gonna go grab their own.
you're not gonna sell things at the rate for YOUR time, it's at the rate for THEIR time, and so you have to charge at a 15 minutes of effort rate, not the 2 hours of effort that it's going to take YOU.
if you want crafting mats to sell -- grind the lower level leather that you can't buy. also fleece. (not Shadowbringers+ though, because at that level it's available at vendors again)
lvl 35-70ish animal/mob drops that are used for crafting everything for leatherworking/weaving sell like fire pretty much always

mounts, glams, minions that you can make will also sell like fire, but that won't start for a few more levels also. people will pay ridiculous amounts for the stuff from ARR that's a PITA to get because it requires stuff from content people don't hardly do any more (like beast tribes)

also, as you're leveling the crafters, you will generate a boatload of crafter materia. The level 1 crafter materia sells way, way, way, way, way, way, way, way, way, way, way, way better than it has any right to. that will also sell like fire. if you can learn how that system works, you can make materia to sell too.
some people thinks with their wallet, sold a few lv 30 job quest items for 200k gil and they sold the same day as i listed them
