If you don't have filters set up, healing classes, can be a pain to play with using a controller.
My static healer plays astro in ultimates on ps5, your point is invalid. Its viable if you put in the work
I like Dragoon, Monk, and Paladin the best on controller.
Bard is OK. RDM is OK.
WHM is easy/fine in solo content and as long as you have a competent party; I'm still struggling with switching targets quick enough when stuff goes REALLY south though. I am used to being able to perform miracles and miracles are hard on the controller.
I have found that I've had to double-bind a couple of spells (I have swiftcast in a couple of different places so that it's natural for my thumb in a particular combo, f'rex). I also use way more than just the four -- uh, loadouts? hotbars? I have an extra two setup for different scenarios. It's...uh, not working well yet.
I gave up on BLM. Dunno if that's because BLM or because controller tho, because it's the first time I've tried it.
Honestly though everything is viable. All of the classes. You just have to want to do it badly enough--youl'll learn. The skill bar is low enough that willpower can overcome unless you are old. The hard part is training muscle memory brand new. Practice. Practice. Practice.

If you care, grab one of each now. If you don't, don't worry about it. I suggest it for now because you can dump MSQ XP into classes a fair amount. If you want to wait it's fine though, since there's catchup XP (you get a bonus if the job you are leveling is a lot lower than your highest).
And yes, Paladin is a tank. =) You'll start as gladiator. Tanking on a controller is easy peasy, even when things go bad.
I do recommend if you're doing it though, read the Trial strats before you go into them specifically. It's not usually necessary even if you're tanking, but if you're freshly controllered knowing the mechs in advance will help keep you from being overwhelmed. Your field of view will occasionally be more limited than on M&K, so knowing some stuff in advance will be helpful.
Getting MSQ XP when you're capped is leaving money on the table. :(
