How do we change jobs on our toon?

Read somewhere that one toon can experience all the different jobs and that intrigues me. Is it a matter of joining guilds and having different weapons/armor in our armory box? How do we explore other classes?

you have to do the job class quest and equip the weapon and it will change your class

First get to LV 10 and do your class quest. Then you can join guilds and equip the appropriate weapon to change your class. At level 30 you will get a soul stone that will upgrade your class to a job. You should get and equip this the second you hit 30.

You can do class change/ job when your current job reached lvl 10.

For example, if you choose lancer. You will start in Gridania, which has lancer, archer, and conjurer guild. And the crafters in that city are leatherworker, botanist, and woodworker.

On leveling lancer to 10, you can visit other job guild and do a starter quest to receive primary tool / weapon.

To change class / job. Simply equip the primary. If you want to change to conjurer, just equip the wand / staff.

You leveled up jobs seperately. Battle classes can get advanced job once they reached lvl 30 and done their class quest chain (Important! There are some newbies forgot to do class quest!) and equip job stones.

Meanwhile, there are other jobs unlocked when you reach level 50, 60 and / or finished A Realm Reborn main quest (Where you can enter Ishgard).

I think the new jobs that available at lvl 50 and 60 requires you to have stormblood expansion.

Other available starter jobs are located in other cities. Which you need to progress the main quest that send you there. Or if you brave enough, walk there avoiding mobs

Just adding on make sure you do the level 10 class/job quest which should allow you to go obtain the other classes/jobs available to you. Reaching level 10 isn't enough in my experience, had to do the initial class level 10 job to get the others to be obtainable. Luckily you don't have to reach 10 on the new class/job before going to unlock another, can go unlock all of them once you meet their needed requirements afterwards.

Keep in mind that if you haven't been to the other cities yet, you won't be able to get everything once you hit 10 initially(eg can't get Arcanist if you started as Archer due to it being in another city), but once you unlock the airship transport to the other two starting cities (Around main story quest level 20) you can collect the classes and jobs there as well.

Speaking of changing jobs, I plan to get the Black Knight class (I decided my character should be a 2-handed sword user and Black Knight is the only class with that kind of weapon) but I don't know where the NPC quest giver is, does anyone knows where he/she is?

He's in Ishgard, you have to complete the MSQ up until Heavensward to get Dark Knight.
