You can press any of them and dance for a while, but if you want to finish the dance in a combat instance in order to deal a good amount of aoe damage you need to do the 2 highligted steps out of the 4 and then finish the dance by pressing standard step again.

There is also the Victory Pose emote, which functions in the same way as Battle Stance, and are unlocked in the same way, through MSQ progression.
Yes figured it out this morning it is the battle stance and victory emotes that do the dance. Awesome.
