What are the most Fun Classes to play?
I know thats Subjective but i would like to hear your Opinion to decide what Class my first Char should be

Very subjective. I'm normally a straight healer, so I preferred the heck out of WHM.

However I've only been playing SAM since Stormblood started because I find it so freaking fun.
You can play every class on the same character. There is basically no use to making more than one character. So you can try them all fairly early and just stick with the one you prefer. Otherwise just choose the one that appeals the most to your style I'd say.
red mage is fun black mage i heard is fun to summoner WAS fun but with the nerf your better off playing red or black mage
Pugilist (Monk) is pretty dynamic, so if you're into fast-paced DPS playstyle, that's something to keep in mind.
Summoner is pretty fun to use, but has A LOT of skills to keep up at all times (namely DoT skills) as well as managing a pet, so it can get pretty tricky on high levels.
Warrior is a strong pick if you want something to tank, but also want to do damage.

Lastly, I'd say you should try Dark Knight and Astrologian (especially Astrologian if you want a fun healer), but those two are from Heavensward and you can't use them until you get to that point (assuming you have the expansion as well).
Depends on your style of fun.

I mained Black Mage for like 450 hours and pumping out abolsutely wacky single target damage/crits is a lot of fun. Black Mage isn't terribly complicated and its end-game rotation is all of like 5 skills over and over for the most part. It can get boring with such a simple rotation after a long time though, so that's why I leveled a Paladin and am now working on an Astro, who is probably my favorite of the 3.

Paladin is my main class. I find it by far the easiest to play, much easier than black mage, but of course black mage is only difficult becuase of lack of easy mobility.

Also tanking is what I do best, at least in this game.
Im enjoying Bard/Archer so far, though I have only played via the Demo to 35. When I buy the game during the steam sale in 2 days, i plan on leveling to 50 and then starting an astrologer (not sure thats how it works, as the whole DLC-Jobs thing confuses me).
I was a White Mage and Monk for the majority of the time and switched to Samurai for Stormblood and I regret nothing. Probably my favorite class in the entire game right now.
Don't forget the crafter classes. It can be difficult at times, but the minigame is fun and you get a lot of benefits for whatever combat roles you want to try. Even just picking one or two and keeping them close lvl with your main can save a ton on repairs. Also, if you want to invest the effort into getting into big league crafting, you can pretty much make it rain gil. Pretty awesome.

You are assuming that tanks and healer are somehow far more harder to play? Not in this game.

Tanks have a large burden of knowledge. If you don't know what you're doing a bad tank can wipe an entire party, repeaditly. Healers need to know how to not die. If your healer goes down the party is probably going to wipe. In contrast DPS's don't need to have as much knowledge about the game, making them less risky to learn on. As far as difficulty goes, every class is different and every role has easy and difficult classes.

However, I'd say play what appeals to you. As it turns out people actually tend to have a role they prefer to play, class difficulty be damned, and I wouldn't say play a role you dislike just so you can learn. Especially since it can take hundreds of hours just to get through the MSQ and expansions.

It's all preference. If you haven't touched any expansion yet or haven't touched Heavensward quests, my personal favorite is Ninja because of it's mechanics. But now that Stormblood is out, I prepurchased it, so I think Samurai has a cool vibe to it if you're a solo player because of it's "ronin" look (wanderer look.) Red Mage is fun because you need to balance both Black and White magic to increase the power of your Red magic skills.

So yeah it's just preference.

I'm pretty fond of starting as Arcanist because when you hit lvl 30 it branches into 2 classes Summoner or Scholar the 2 classes are linked and as you lvl one the other lvls as well so when you reach max lvl you'll have a max lvl dps and healer.

Other then that any Healer or Tank will give you faster queues for the dungeons/raids so they are good choices. The rest is preference on what kinda play style you find fun.

"I just died because tank doesn't know how to hold aggro and healer didn't heal through stupid."

Monk until touch of death was removed.. Such a bad muscle memory rotation going on that I keep pressing the button it was on by accident.. You shall be missed touch of death <3
