However I've only been playing SAM since Stormblood started because I find it so freaking fun.
Summoner is pretty fun to use, but has A LOT of skills to keep up at all times (namely DoT skills) as well as managing a pet, so it can get pretty tricky on high levels.
Warrior is a strong pick if you want something to tank, but also want to do damage.
Lastly, I'd say you should try Dark Knight and Astrologian (especially Astrologian if you want a fun healer), but those two are from Heavensward and you can't use them until you get to that point (assuming you have the expansion as well).
I mained Black Mage for like 450 hours and pumping out abolsutely wacky single target damage/crits is a lot of fun. Black Mage isn't terribly complicated and its end-game rotation is all of like 5 skills over and over for the most part. It can get boring with such a simple rotation after a long time though, so that's why I leveled a Paladin and am now working on an Astro, who is probably my favorite of the 3.
Also tanking is what I do best, at least in this game.
Tanks have a large burden of knowledge. If you don't know what you're doing a bad tank can wipe an entire party, repeaditly. Healers need to know how to not die. If your healer goes down the party is probably going to wipe. In contrast DPS's don't need to have as much knowledge about the game, making them less risky to learn on. As far as difficulty goes, every class is different and every role has easy and difficult classes.
However, I'd say play what appeals to you. As it turns out people actually tend to have a role they prefer to play, class difficulty be damned, and I wouldn't say play a role you dislike just so you can learn. Especially since it can take hundreds of hours just to get through the MSQ and expansions.
So yeah it's just preference.
I'm pretty fond of starting as Arcanist because when you hit lvl 30 it branches into 2 classes Summoner or Scholar the 2 classes are linked and as you lvl one the other lvls as well so when you reach max lvl you'll have a max lvl dps and healer.
Other then that any Healer or Tank will give you faster queues for the dungeons/raids so they are good choices. The rest is preference on what kinda play style you find fun.
