However, all dungeons and trials are level synced, so you never really "out level" them so to speak. Gear can trivialize things, but there are also ilvl syncs at times.
Though I can say that server choice is a little less important than it used to be since they introduced cross-server party finder, which eases the burden on finding a group for the more dififcult end game stuff. They've talked about possibly adding cross-server linkshells and free companies (guilds) down the line, as well.
Odin/Ragnarok = Legacy Servers, most players are end game focused but there are noobs. market is pushed towards endgame
Lich/Zodiark = considered once noob-centric because noobs were pushed here before Stormblood came out so there is lots of earlier on players.
Louisoix/Omega = New servers set up for SB. Lots of players migrated. Lot of Variety, US, Australians, different Europeans
Shiva = Unofficial German
Moogle = Unofficial French [These two might be mixed up]
Cerberus = Very raid focus
Phoenix = Between Odin and Cerberus in terms of activity.
Omega = also unofficial RP --> EU equivalent of Balmug, at least thats what people tried to make it.
These are from what people have told me and my own experiences.
Do know that Square are trying to balance server populations evenly compared to the past so there are people starting on all of them compared . Consider the XP bonuses too.
