You can play all classes on a single character.

can i change them on the go without any limits?

You start off with one class, but you can do certain quests that allow you to play others. Once you have some of those classes open, you can swap them on the fly, assuming you're not in a situation that would prevent it, like combat.

That sounds awesome, which starting class is most fun?

You might want to check out some videos or guides to find the class you want to use, since it's mostly personal taste I think. I haven't played the game enough to know about most classes.

But here's a video that my friend showed me when I was getting into the game:

Rogue is pretty fun especially when you get to 30 and get your first Ninja abilities.

the starting classes become other classes later on, like the conjurer becomes the white mage.

I would recomment to pick one and then play to level 17 and unlock "Palace of the Dead" (feel free to google how).

The Palace is essentially a special dungeon where you level seperately at a ridicolous rate.
Unlock the class you wanna try and play 1-2 rounds of palace of the dead and you´ll get a good look at how it plays up to lvl 30 (class advancements are not unlocked in there for the base class).

That should give you a good feel for the classes.

okay i dont see it specified so incase anyone else looks at this, you have to level up your first class to 15? it got changed used to be just level 5. as far as switching classes whenever you cant swap in dungeons or instances and you cant swap while in combat in open world. once you get a class to level 30 and do all of the class quests the level 30 class quests unlock the adv class. dont worry about grinding xp til later find a class you like and do the main story quests then grind xp for others class later.
