the starting classes become other classes later on, like the conjurer becomes the white mage.
I would recomment to pick one and then play to level 17 and unlock "Palace of the Dead" (feel free to google how).
The Palace is essentially a special dungeon where you level seperately at a ridicolous rate.
Unlock the class you wanna try and play 1-2 rounds of palace of the dead and you´ll get a good look at how it plays up to lvl 30 (class advancements are not unlocked in there for the base class).
That should give you a good feel for the classes.
