FFxiv story really picks up around lvl 35 and once you get heavensward shoots way up in quality from there. I just finished shadowbringers storyline and it is the best story in any mmorpg I have ever played.
Classes do start out a bit slow but it definately picks up as you get more off global cooldown abilities. I personally love that you can be every class on one character. The msq alone should be pretty much all you need to level to max and any side quests you skipped can be used to fill gaps/level alt jobs. You have a few options for leveling jobs you can do the rouletes once daily for big bonus exp. You can do palace of the dead or heaven on high as well. They are randomly generated dungeon floors you clear 10 levels at a time. That is for just the combat jobs, crafting/gathering jobs have their own rotations and things to do to level but are generally best saved till you have more experience in the game because they can be pretty expensive or time consuming.
Endgame is usually the extreme trials, aka harder versions of the primals you fight in the story, alliance raids(24man), and normal raids(8man). The 24 man ones are similar to lfr in wow. The 8 mans have their normal and savage versions. They have enough difficulty levels you shouldn't have too much trouble finding something the right fit for you so the best bet is to try and find a FC that does the things you want to do.
sidequests are mostly generic mmo stuff besides the story quests which are pretty unique.
combat is good at lategame. not so much before that point due to lack of skills in total. gets better as you get more buttons to press.
sadly not much lategame content for an mmo in generel compared to others especially when it comes to combat related things. this is big weakpoint for this game sadly since years.
4 raid bosses total per cycle and 1 extreme trial boss (same as the raid bosses just easier and not weekly) which are weekly locked on top per cycle and a standard currency called tomestone which is also weekly capped at 450. most pieces you can buy cost more than 450 and getting 450 per week is a joke in terms of content (run 5 random dungeons per week)
the currency gear is pretty much welfare gear gettable by everyone at next to no effort. not really sure if you can count that as "content" as its not very engageing to cap these. just like the "normal" version of the 4 raid bosses.
in terms of endgame complexity do you refer to gear or skill?
as gear in this game is VERY boring and bland sadly. another huge weakpoint compared to other mmos.
skillwise its not super complex but not easy either at the highest level of play its qui
te challengeing.
the lategame pattern never changes in this game. 1 cycle of gear is relevant for about 7 months. then its reset. gear from the old cycle is pretty much meaningless for the new one due to crafted gear (which you can just buy the moment a new gear patch releases)

All discussions i find are quite old and thereby did not take the 2 expansions of GW2 into account.
To me it is a plus if vertical progression is missing-i like doing stuff because i want to do it, not because i have to in order to keep up with my gear
the reason for this is like i mentioned very bland and boring gear system in place. gear stats and numbers increase every 7 months.
that beeing said you can straight up SKIP the previous gear tier and go straight to the newest one if you didnt play for awhile.
the advantage of this system is you can just come back at any time and never really fall behind gear wise.
the downside is it discourages constant play as you dont really have any advantage gear wise over an returner in the long run no matter how much you play. once a reset patch happens everyone is on the same field gear wise again.
i am not up to date about gw 2 anymore been a few years since i last played that. you might wanna ask that on the gw 2 forum instead. will get better answers there for sure on that front.
FF14 picks up and gets a ton better later on, and pve content is the main focus. Story wise FF is better, combat wise gw2 is more smooth and fluid but the game is harder, FF combat varies depending on class, some are faster than others. But in general both games have cool combat that looks good when it's happening.
FF does require a sub but if you play gw2 for free you have limited space and such, I player back when it wasn't free so I'm not too sure. Being free to play isn't such a great thing it means more bots and less commited players.
Now onto characters, both games are decent with this, although FF is more anime/weeby with its fanservice races that are catgirls and bunnies. GW2 has more serious and real looking races, FF is a bit more cartoony.
Social wise gw2 is or was better, FF a lot of people only talk briefly in pve content and reserve most chat to their FC which are the guilds. I found gw2 to have more talking and socializing, it's also much nicer when hanging out, graphics are amazing and so many beautiful places.
GW2 is more fun PvP wise hands down, PvP on FF is very lackluster.

Dungeons and something similar to dungeons called Fractals will keep you reasonably entertained for your first few hundred hours and in the long run the more challenging stuff is raids and the obtaining of fashionable weapons/armor that can take thousands of hours to get. You have to find a group outside of the game to raid with and as with most games the majority of gamers are dumbas.!ses but eventually you may find a reasonable group.
The story of GW2 is trash and entirely inconsequential. That said, I found the story of FF14 to be not much better, so if others say FF14 is great then perhaps GW2 isn't so bad by most people's standards?
It really matters how important the atmosphere, music, visuals, etc. is to you. If your enjoyment of an open world game is affected by that, then GW2 will be very enjoyable for you.
I played it back when it came out enjoyed it but always had the struggle of enjoying classes (got bored of the same couple skills I could use) the variety of skills incorporated with weapons really turned me off from feeling like just the same as the next necro or guardian standing beside me.
I put over 1000 hours in the first gw with expansions and still missed a lot of what the game had to offer.
For 14 I enjoy it just as much as the original GW and to me it feels very similar, I’ve only ever finished ARR story multiple times as every time I come back to 14 my builds or skills I was very fond of have been removed or no longer work with my favourite class.
I do really enjoy it and plan to get further into 14 and experience things I never got to.
All I can say is maybe try the free version of gw2 if it’s your cup of tea then stick with that, if not then14 could be the best choice for you.
If you can you could always buy 14 and try both and see which is better as just buying the base game is pretty cheap now.

GW 2 has gone downhill every since their first expansion (Heart of thorns). The second expansion (Path of fire) is an improvement but not as good as the Vanilla (Free) section of the game.
Also as a warning after you complete the free section you are supposed to then play episodic content called Living world, here is a list of them and the play order.

-killing trashmobs that are not even remotely challenging
-gathering in general
I read some questionable stuff about both games(true?):
- FF14 has tons of boring filler quests between the end of the basegame and the start of the first expansion
-GW2 expects you to have tons of alts, forcing you to replay the slow earlygame quite often
