Should they? Maybe. Sometimes they do. Sometimes they don't realize you are the Warrior of Light. There's a fair bit of lacking news networks. This is why you don't know much of what goes on in Garlemald, and why nobody is quite sure of what was going on in Ishgard until they broke their isolation. Plenty of people know the Warrior of Light as a figure, but not everyone recognizes them AS the Warrior of Light. Some do, and among those that do, not all of them are respectful of you.
Also, not everyone can see moogles.
Let's reply to your other points.
1: Because the Warrior of Light "is still a good person". Also, Grynewaht wasn't really a threat to the WoL. He was more of a nuisance, like a fly to swat to the side. And so long as he was on the field, the WoL had more or less an idea of what they'd be dealing with regarding him.
2: They aren't really that obtuse. Lots of them are around locations you'll eventually visit anyway for the MSQ.
3: This was mostly a problem in ARR. Due to being an inherently unvoiced player character, they don't speak too much outside of dialogue options, which means a lot of other people talk instead, while you're displayed as the stoic. This however, is less common in later expansions, showing a much wider array of emotion and movement, in part combined with even more dialogue options.
4: More of an ARR problem to go back and forth all the time, but it admittedly is still present in other expansions, to a much smaller degree. It really just boils down to not wanting to move the player around all over the map too much, I feel. Thus having you go there yourself gives you the ability to make detours for other quests, or picking up Aether Currents.
5: Addressed this one earlier. You'll notice the characters that are fully aware of your talents, tend to regard you with respect. Gaius van Baelsar, the Scions, the Crystal Exarch, Zenos yae Galvus, Haurchefant, Aymeric, Estinien. The ones that ask you to go on fetch quests tend to be people OUT of the know generally. Common villagers, for example. Sometimes however, you still get a chance to be annoyed by this. For example, when dealing with a certain Garlean Performer and the "F" word... Hell, even some of the Ascians start to respect you just a TAD bit more than they originally did. Elidibus in the "You are so ♥♥♥♥♥♥♥♥ annoying" sense, for example.
To be fair, most of the time people tell us to do some trivial task, they either don't recognise us, or they're surprised that the WoL would ever deign to volunteer for something so mundane. Sometimes when we turn in the quest we get something along the lines of "Thal's balls! I had no idea you were the soddin' WARRIOR OF LIGHT!"
This would explain a ton of what you addressed.
If you did, you would know that ever npc is important. Maybe not now but, always is.
Even those apple picking quest npc's will be be a catalyst for moving the MSQ later on.
They also remember you and what you did for them, adding to the story more, accomplishment is the feeling btw.

Now that girl is the biggest part of this expansion.
Too bad most skipped and have not felt this from the start.
This happens with people who use skip potions.

"Grynewaht is a churlish brute, possessing only the most rudimentary grasp of strategy and tactics and relying on the strength of arms to crush his foes. He enjoys running down his enemies and bears deep-seated grudges, specifically towards the Warrior of Light and the Scions of the Seventh Dawn for constantly defeating and humiliating him.
Upon his demotion to bodyguard to Yotsuyu goe Brutus, Grynewaht is desperate to regain his position in the Garlean army, and fears the acting viceroy's anger. Likewise, he is just as fearful of the Garlean prince, Zenos yae Galvus.
He tends to say "its like all my namesdays have come at once" whenever he thinks he has the advantage in battle."

He get's away because were not killers. That and he was never a threat lol. He's more like a fly that keeps landing on your food.
He absolutely IS a threat. A HUGE threat. Grynewaht has slaughtered hundreds of men in his career, and his name is spoken with deep dread and terrible fear!
...amongst the Garleans, anyway. Seriously, do you see how many of his own men you see him kill in his fights against you alone? It's little wonder you always let him go. He does more damage to his own people than he does to his enemy!
There's also the fact that several times during the course of the game, even as far as into ShB, when you're asked if you'll do something and you're given a choice of response, there tends to be something along the likes on "It sounds like a wonderful adventure!" or the like.
You may be a Warrior of Light/Darkness, but you're also, at heart, an adventurer.
