Crafting jobs are a different matter, they have synergy so you need all of them to get good results. Additionally they cannot provide good results unless you buy their super expensive crafting gear, and the potential to lose a lot to shifting prices is a pressure. Therefore I cannot recommend them, better to make friends with a crafter and pay them a commission instead.
however, gathering is easier. you can't power-level through it like you can with crafters, but it comes in handy. where do you think crafters get their crafting materials from? gathering.
i'd advise leveling up botanist and miner, personally. botanists can gather items that weavers, culinarians, carpenters, and leatherworkers (to an extent) use. miners can gather items that armorers, blacksmiths, goldsmiths, and alchemists use. fisher is a pretty worthless class to level up unless you enjoyed the fishing in ffxv. this is just a discount version of that fishing.
i'd personally recommend levelling up gathering. at higher levels (and even lower ones), certain items sell for a lot. hope this helped!
It's a large time sink if starting from 0 and a big gil sink if you're looking to Omnicraft. That said you can find lower level items/gear that can still sell for a pretty penny. Also don't bank on anyone telling you what they craft to make money, very few will give away their secrets.
