how do you get more familiars

You get Emerald and Topaz Carbuncle as an Arcanist. Once you get Scholar job, they're replaced by the fairies, Eos and Selene. With the Summoner job, they're instead replaced with Garuda-Egi and Titan-Egi, while also adding a third, Ifrit-Egi. (The Egis themselves can, as of the most recent patch, be glamoured back to appear as Topaz, Emerald, or Ruby Carbuncles) You can only ever have one out at a time, though.

Pets or minions? Pets are restricted to certain classes whileminions are not.

Minions can be bought on the market board, earned thru quests or dungeons

Pets just get unlocked as you progress. Usually they get unlocked pretty early in the class
