It's possible SE intentionally left out the Wakizashi in order to not offense players from older families, who feel foreigners even touching a daisho is an offensive thing. (Almost all daishi are either gifted directly by a Shogun or passed down in a family lineage. It's a bit like someone touching your family jewels. Yes, pun intended.)
Battojutsi / Iajutsu is a combat / killing technique, meant to slay. Whereas the styles that most often encourporated the Wakizashi were defensive / protectitive styles. Since the SAM in FFXIV is not a Tank, this would be another reason to not include Wakizashi.
Was the second sword also not a spare weapon and backup? Maybe there are times when a full length katana is too long for a crowded battle or using it to counter another weapon type? Samurai would try to disarm eachother would they not? So the second sword would be a life saver just as medival knights carried long daggers for when downed etc.
I dont think many older japanese traditional people play games lol but how would having it in a game even offend them? Its a game.

Like I said, there are a large number of reasons why they might not have chosen to employ the wakizashi.

The definition of "Samurai" today, is just a myth, and completely romanized.
Original samurais were archers, didnt even use swords until later dates.

Edit: Samurais didnt even fought with their katanas, they were only for decorative purposes, to show who they are, especially in Tokugawa Era.

Second you refer me to a wiki article which is also romanized. Take a step back and let someone talk who actually studied 1 whole year about the classical samurai, which is not even close what you believe in they actually were.

Edit: You should invest less money into your computer but more into your education, you are free to ask me about books which are not romanized and will tell you everything about the classical samurai you need to know.

I’m sorry, but your supposed education in history is either made up or given to you by a propaganda department if you’re going to seriously sit here and try to write up Samurai as “honor-less sell swords” throughout Japanese history. You’re literally referring to what many of them became AFTER they were NO LONGER Samurai. BTW, the word for that is Rurouni, Ronin or Rojin. “Masterless Wanderer”.
As for weapons, the Samurai wielded just about everything in the book, down to flintlock rifles over history, but the Katana was a status symbol of the nobility which evolved over time since sword use became popular in Japan starting with the Jōkotō period. (Around 900 CE.) Gatana themselves weren’t developed until the Mongol invasions, but by around the 1300s, Japanese swords has evolved from the tachi to the katana. Regardless, they were difficult and expensive to make so they were objects only the nobility could commission. Blood status to this very day remains an actual thing, once noble families are in many cases still well off or have recovered from their fallen place over time by confirming to the New Democratic Parliament based government system.
In short: The claim that the Samurai were always Ronin is complete and utter nonsense.

I have no problems with japanese, neither do i with the romanized samurais or classical samurais. Why would i pick an age and a country which i hate, and study that specific thing 1 year. Doesnt even make sense.
I know that we are discussing a game, and im absolutely fine with how they displayed them. Didnt say anything against it. Only thing bothers me that this display of samurais is the most accepted one which is not canon, and people want some fancy anime moves triple katana wakizashi attack, while saying that would be accurate.
