In general I would adivse you to keep the stuff, if you really want to level up your crafters (which you probably want to do).
BUT! Sometimes you'll find stuff that you really want to sell. Certain fishes i.e. are worth several thousand gil (depending on server etc.). Other stuff sometimes fetches a nice amount of gil, too.
In the end you'll have to take a look at the market board and check the current prices but it's totally worth it ;)
Off-paw, I'd keep the HQ stuff and check the sale history. Prices fluctuate a great deal and something worth 1 gil might be worth 1k the following week... and vice versa.
On the other paw, even if it might seem slower... but as long as you have a single class at max level [thereby giving all your other classes a +50% boost to xp gain], you can level crafting and gathering classes evenly. Sure, you'll have to store much more stuff and do more research... but that's part of the "fun", ins't it?
Oh and not to forget one's tail... check the free company missions / quests. Those items are from a list of items, so you can make bank by remembering that. Either sell them or turn it in yourself.
PS There are a bunch of quests and missions that help you level your non-combat classes. Look them up and save a lot of time.

If you gather check the market board to see what is selling though in a lot of cases some mats just arent worth a thing, some can be bought from NPCs as well. Might have to just gather early on for just exp.
