Help with DoL and DoH stuff.

So I've heard a ton of conflicting opinions regarding how I should approach these classes. I'm not much of a gatherer or crafter. I've never really gone in depth in either in any MMO (this is the only other MMO i've taken seriously outside of TERA, which I barely did any crafting and gathering in as well).
I guess my question is.. how should I approach these? Should I get all of these classes to level 15? So far, I've got goldsmithing, leatherworking to 15, and blacksmithing to 10. What should I expect? Hour wise, how long can I expect to see results in making gil? My goal is to either make gil by playing the market, or make my own gear for classes I play (NIN, Dark Knight, and a healer class I've yet to try to play). Thanks to anyone who is willing to direct me in this situation :D. I IS NOOB.

Man, that's quite a bit of info you laid down there. I'll try to condense that as much as I can to keep track. But basically
- Get Culinarian to lvl 37
- Do xiali quests and sell materia IV
- spam lvl all crafter classes
and take my option of leveling culinarian or leatherworker/weaker after that?

That's correct just remember you are leveling these 2 first in order to craft yourself a better gear.
