Arcanist = DPS, upgrades to Scholar (Healer) and/or Summoner (DPS)
Thaumaturge = DPS, upgrades to Black Mage
Arcanist: All the DoTs, plus a pet.
Scholar: Protective shields / temporary HP.
Summoner: DoTs, DoTs, DoTs, BAHAMUT!
Thaumaturge / Black Mage: You are the black mage, you cast the spells that make the enemies fall down. By burning their faces off.
Arcanist is unique in that it's the only class that has two jobs it can go into, Summoner and Scholar, and focuses on Damage over time and the summoning and controlling of additional entities to fight for them. Depending on the job they choose, this is either fairies or Egi, while arcanists themselves get carbuncles which are purely offensive summons.
Scholars get Fairies, which are healer pets. Scholars are proactive healers instead of reactive like white mages, in the sense that scholars heal more often and are more about preventing damage to their targets than white mages are. While White Mage gets healing over time and big heals, scholar gets less powerful individual heals but can protect their targets with barriers that outright nullify damage while they work, and they get a few of them. later on, they become more strategic in their application, in that they can spread out barriers over everyone, forgo the barrier for more powerful single heals, and so on.
Summoner on the other hand is a powerful DPS class, which differs only a little from Arcanist. The biggest difference comes at about level 50, after which they transition their focus away from doing DoT so much and more towards doing larger damage per spell, as long as they do keep the DoTs up. they also become less summon oriented, at least through heavensward, as the summoner themself becomes more capable of doing damage. Summoner has the unique distinction as well of being the only DPS who can raise targets during combat, allowing them to salvage a situation that would otherwise be a wipe.
Thaumaturge and Black Mage on the other hand is pure damage. you cast spell, target goes boom, fwhoosh, crackle or bzzzt, depending on the spell. very straightforward. you just keep cycling between fire and ice as your MP dictates, and occaisionaly complain that you had to move after putting down laylines.

actually Summoner has 2 carbuncles (tank and magic dps) and 1 egi (attack), my 35 smn has three. also though arcanist can have both jobs it's not required to take both, just saying in case someone is thinking they prefer one over the other. Each job is has it's own leveling up.
You level one, the other levels automatically.
No other class does that.
However, scholar and summoner are not for everyone, they are weird and have books as weapons and are not straight forward like white mages or black mages.
