J/k aside, turn on Vsync. Personally I use FastSync uncap fps because FastSync is so good (if your fps is sky high).
Unstable frame is only a problem prior to FastSync. Fastsync simply discards not used frame therefore there is no tearing nor stuttering IF your fps is always higher than refresh rate. The benefit is zero input lag from Vsync.
FFXIV has Vsync. It also has 1/2 Vsync, in game settings.

Some players might want to cap the FPS to lower the GPU's workload, i.e. lower TDP/etc. If so, you'd want to disable fastsync and just turn on Vsync and cap the framerate in FFXIV [you can choose between 1/1, 1/2 and 1/4 of the current frame rate, i.e. if your display's max is 60Hz, then 1/1 = 60fps, and 1/4 = 15fps

Frame rate has some impact on how responsive the game feels... so usually the higher, the better.
