Yes but what if I shoot his heart and he takes damage? Am I suppose to NOT do that to spare him?

I've actually done everything to get the best ending on my first playthrough, but apparently you have to beat the game twice to do that. Oh well.

You don't really need to beat the game twice (Not from scratch at least).
You get the first ending, and then, you can reload your saved game to get the super duper happy ending =P

When in the castle to met the final boss, there is a chain that says "come met me in the Garden to get anything off your chest" is it talking about Toriel's Garden waaay back at the start of the game!?

For some reason shooting his heart doesn't count. It doesn't actually do "damage" to his HP bar like using the Attack function.

Hey, nobody said you have to be a absolute pacifist. It doesn't matter how much you hurt someone as long as you're not dealing the killing blow.

Oh, dear, that claim is still going around, eh? It's not true. If you didn't kill anyone your first time through, you should be able to just reload your old file and backtrack.
