For a bit more detail, once you name the human, you cannot change their name again. You're stuck with that name even if you reset your game.

However, once you get a special ending in this game, you get the option to change your name again.

You can either do it the legit way and complete either pacifist or genocide, or you can do it the cheaty way by editing the name in the save data.

The cheaty way:

Search %localappdata% on the desktop.
Click the search result of the same name.
Find the folder within named UNDERTALE.
Inside the folder, there will be a few text files, open the one named file0 with Notepad or any text editor you have.
You will see the name of your character is the first line of the file. You can change the name to whatever you like.
File-save the edited text file.
Open the game.
You will notice that the name will not have changed yet as you reload your save.
Save at the checkpoint and the name should change.
