how do i get to undyne's house / how do i get the true lab?

There's a lot of specific things that have to align for you to be able to get into Undyne's house and later the True Lab.

Here's all the things you have to do:
*You cannot kill anything in your playthrough. AKA, your XP must be ZERO
*You must have given Undyne some water after running her boss battle
*You must have dated/befriended Papyrus to get the message about going to hang out with her.
*After receiving the call from Papyrus to hang out with her, her home can be found on the left-most path along the north wall at the Waterfall save point, next to Napstablook's house.
*To get the True Lab you must have: Beat the Neutral Ending, Dated Undyne, and finished the Mettaton EX battle by getting High Ratings
*The call to deliver the letter to Alphys to begin that date/path to the True Lab, you must be backtracking to leave the Core to MTT resort WITHOUT going up the elevator to start the New Home path, doing so will likely require you to complete the Neutral end again before the call will prompt you to start the Alphys date.
*Alternatively, going on the Undyne date AFTER the Mettaton EX battle (but before going up the elevator) and all other conditions were met will prompt you to deliver the letter right away.

Yeah, there's a lot of stuff to do. But if you go through the game as a pacifist, it becomes really easy to unlock the extra stuff after completing the Neutral end and just backtracking.

So i have to fight flowey again

No, just finish the sidequests... you'll get locked into the pacifist ending immediately after completing the True Lab. Once that happens fight Asgore again and the battle will have a different outcome.

So i have to beat mettaton ex with a rating of 10000 then go back to the lab without entering the elevator that comes after the fight?

Did the Mettaton EX fight end with a viewer call-in special? If so, you spared Mettaton, it's actually kinda hard not to spare Mettaton.

Ehh... To simplify it, you will get a call before you actually get into the Resort that will tell you what to do.

If you don't get the call, it means you missed something.

Have you gotten the neutral ending already or not? If so, Mettaton should already be spared.

The message for Undyne to give you the letter for Alphys won't happen until after you get the neutral ending and then continue your save at least once.

You can never befriend Alphys before getting the neutral ending the first time...
