Why didn't the monsters just escape through the hole?
I mean, the game shows that there's an entrance to the Underground, the hole that Frisk fell into. So why not just leave through there?

The monsters (at least Toriel) were aware of the hole, considering the past humans that had fallen into it.

Surely Alphys could have invented something to help them ascend through the hole? Afterall, Mettaton can fly, and she even makes you a jetpack.

It's not protected by a barrier as far as I'm aware. If it was, Frisk would not have been able to fall into it.

If you look at the intro, it's a cave roof glowing on the other side

I forget which, but one character says that anything can enter through the barrier, but nothing can exit without a strong soul. So that works for the hole too.

Honestly, we don't need to know absolutely everything and the locket is in Asgore's home, I believe. The locket is most likely Toriel's or Asriel's. You should imagine some of it on your own. The game does not need to detail like absolutely everything for you to understand.

As for the hole, Asgore is on the whole other side of that world. He won't just stand near the hole and wait for souls so he can break the barrier from there. He waits that the monsters bring him the children who would unfortunately fall into that world. You just need to think on your own some.
