My only concern is Asriel, who is semi-competant in Bullet Hell and I only fought him once
I dunno... it would definitely be interesting to see, but I can't think of how it would work.
I haven't done it myself but I have been spoiled. Sans comments during the dinner scene if you haven't died yet. He comments during his phone call if you haven't saved (also a few other self-imposed challenges), but not just if you haven't died I believe.
Flowey says something different in his fight (instead of saying he blocked your save, he says you can't escape because you never made one) and supposedly so does Asriel (similarly, instead of just not having the power to override his save, it says something like "but never having SAVED, you don't know how").
I'm not sure how you'd get to Asriel, but if I had to guess either you'd be able to befriend Alphys after Mettaon on your second run through the game (yes you'd have to do it twice), OR there's actually no way and it's extra dialog Toby threw in just in case someone found a way.
Funny, I'm the exact opposite!
