So changing the sentence to "Lorem ipsum docet" had to have been deliberate. It's entirely possible its meaning was deliberate too.
(Interestingly, 'de Finibus Bonorum et Malorum' translates to ''The Extremes of Good and Evil')
lorem ipsum translates to "pain itself", the variation the memoryheads say is "pain itself teaches"
this is connected to the unused line: "is that a cut on your face, or part of your eye? the gash weaves down as if you cry. the pain itself is reason why."
the line isn't placeholder text; the placeholder text in this game is "wake up and smell the pain". a weird line that may or may not be connected to the gaster conspiracy but that's not relevant. the point is that the "the pain itself is reason why" line is deliberate, and it was meant to be found by dataminers. so, we can connect the memoryheads to whatever the line is referencing, and while they do technically have small "cuts" on their eyes, the line is most likely referencing the mysteryman sprite, which has a large gash coming down its right eye, down to its mouth, and a large gash going up its left eye (it does not seem to end at the top of his head, but mysteryman only gives us a front view, so detailing where it ends is impossible.)
mysteryman is all but confirmed to be gaster's physical form.
memoryhead is pacified by using the cellphone and makes dial-up noises, while all throughout deltarune, gaster is implied to have connections with cellphones. notably, gaster's connection to phones wasn't established in undertale, in fact; if you try to call someone in the presence of a gaster follower, the phone will not turn on, and if you try to call in gaster's room, there's simply no response.
still, from deltarune, we know that gaster is connected to cellphones, and seeing as he was the royal scientist before alphys and that memoryhead resides in the true laboratory, he might have connections with memoryhead.
let's talk a bit more about memoryhead.
memoryhead only shows up for its battle. it is never seen again. all the other amalgamates are seen again, but not memoryhead. it shares characteristics with the amalgamates, but it's not obviously made out of other monsters smashed together like the other amalgamates. in fact, the monsters that are part of the other amalgamates are monsters that we know died and were sent to alphys for experimentation, according to other sources, but every relevant dead monster fits an amalgamate.
four amalgamates corner you at the end of the true lab sequence, and are subsequently fed by alphys. there are five amalgamates: snowdrake's mom, reaper bird, endogeny, lemon bread, and memoryhead.
seeing as memoryhead isn't just monsters smashed together, and alphys only mentions the amalgamates being monsters smashed together
maybe alphys never saw it, she has to go to the true lab every once in a while to feed the real amalgamates but i doubt she spends much time in there.
seeing as gaster was the royal scientist, he could've created memoryhead. this would explain why they're tied to him so closely, and why alphys/the other amalgamates seem to have little to do with them.
notably, memoryhead's name in battle shows up as 6 blank spaces, and when toby fox's twitter was taken over by a figure implied to be gaster, his twitter name was 6 blank spaces.
BUT THAT'S JUST A THEOR---
Like how through “determination”, dying and re-fighting bosses over and over helps you learn them?
Seems similar to the hidden text in Big Shot.

it is literal gibberish derived from cicero's de finibus bonorum et malorum used to preview text when making graphics or what have you without having the meaning of aforementioned text affect how it looks.
