Thing is, of course not everyone will like it. I have a friend who loved the game, but thought everything past the middle point was a waste of time.
Seeing the positive vs negative review count, though, you'll have a high chance of finding Undertale to be worth it.
Just don't read too many reviews, you'll mentally overhype yourself. (My review on the game doesn't help with overhype...)
Anywho, if you're not a fan of games with plot and story, you might want to leave this one alone.
Beware of rage, by the way. These threads will gain unneeded attention. You might want to unsubscribe as QUICKLY as possible.
You said you've played it for a couple of minutes. Try to sit through it and get to like the characters. But it's not for everyone, it's heavily story-based, so I respect if you don't enjoy this type of games.

If you still feel like you don't understand, play the demo again.
That's all you should need, really! Nobody will give you a good answer without spoiling the entire game.
My guess as to why people enjoy it so much? It's a story-driven 8/16-bit RPG Indie game that molds and forms around each battle and each decision you make. There are about eight different endings, if not more. Three different main routes (Technically four, given that Genocide splits between No Mercy and Soft Genocide,) for a player to take, many lovable (and hate-able,) characters, and a metric butt load of feels to come out of it, regardless of which route you take.
The results of your runs ALSO affect other runs as well, which is kind of a neat thing about it too.
Personally, I did a Pacifist (Neutral forced...) run, followed by a True Ending extension. I couldn't bring myself to hurting mama... ;~; I wanted to kill that little Flowey b*stard so bad, but I showed him mercy.
It's all in the eyes of the player. But this game, in my opinion, has worked for it's 9/10 and 10/10 ratings. All runs have their difficulties, some more so than others. My major qualm is that I see a LOT of mistakes in the texts.
...Even if he did decide to be a total sack of ♥♥♥♥ and steal everyone's souls.
I also don't like how creepy things get at the end of the Neutral run with him casually closing the game and doing what he pleases with the files.
Well.. I just spared Flowey because if I were to kill him, I'd be no better than him, right?
I may not have the heart (or the skill) or do Genocide, but I'm not uninformed~
All of your choices mathers. The game will remember what you have done.
When you are killing everyone. You gain exp and game is easier, but other characters runs away from you frightened. You won't meet some characters and others will want to stop you at all cost.
Example: During your 1 game Toriel will ask you do you Like Cinamon or Butterscotch. If you start game from the beggining the question will change. I have chosen a Cinamon, so in next game she asked me a question to be sure that my fauvorite flavor is a cinamon.
BTW: Demo shows only Ruins which are not so interesting place as others.
