Character ages
I think maybe Papyrus and sans might be in their 20s or 30s, Toriel might be in her 30s or 40s, Undyne might be in her 20s or 30s, Asgore might be in his 40s or 50s, Frisk might be 6-14, and Alphys might be in her 20s or 30s.
How old do you think they are?

Papyrus is 19.
Sans is 35ish
Toriel is 40+ maybe 50+
Asgore is same
Alphys is 20s
Undyne is 20s
Frisk is kid

Papyrus - Late teens or early 20's.
Sans - 20's.
Toriel - 30's or 40's.
Asgore - Same as Toriel.
Alphys - Late 20's or early 30's
Undyne - 20's
Frisk - Between 8 and 14.

But Toriel and Asgore don't really have an age, since they don't actually age at all. They're the oldest characters in the game except for Gerson, who's the physically oldest character since he actually ages.

I'm pretty sure it's outright stated that Asgore and Toriel are very old. I don't remember when exactly though. Note that some of the characters don't even recognize who Toriel is in the true pacifist ending.

That kinda helps establish how much time has passed between Chara's death and Frisk's arrival, since she split from Asgore following the incident. If nobody knows (or at least remembers) who Toriel is, a huge lapse of time must have passed.

However, there is no real telling how old she and Asgore are. All we know is that boss monsters age differently, only getting older as their offspring grows up. When Asriel died, their aging halted. If we knew how long ago it was between Asriel's death and Frisk's appearance, it might make it easier to assume their real age.

But I'm rambling, OP is talking about APPARENT age, as in how old they look. Given how lively Toriel still behaves, I'd wager her apparent age is probably 30s or 40s. Same with Asgore.

What makes it ultra confusing is that they had cassette-based home video recorders, so either the timeline is vastly different than Earth or most of the cast is relatively young and was born shortly after she left.

I'm betting the timeline is vastly different than earth. I mean, have you seen the Core? There's no telling how old that structure is, but it is extremely advanced by human standards. It's safe to assume the monsters are more technologically advanced than humans. Could be due to them being magical creatures?

If monsters can build something like the Core, then cassette tapes wouldn't be inconceivable.
