Eventually, you will perform the run again out of boredom or similar, ripping the timeline back once more.

I will go through on this run fight against sans but will not deliver the final attack.

you only lose your soul once you complete absolute genocide because the world is destroyed and your reset ability no longer has its effect.
So long as you dont go through with the sin you can undo your actions and keep your soul.
HItler obviously lacked this ability and commited his sin knowing he had no capability of undoing it.
