As for what it is, I think people look into it too deep without considering what it pretty much is (on the traditional philisophical level): an immortal essence within a human/organism. It is simply formed differently in a human than it is in a monster, resulting in the human's being much more superior.
A monster apparently needs to be goodhearted in order to have a moderately healthy soul, a human doesn't need that. Determination doesnt have much involved within the soul itself, as Frisk is equally determined during pacifist as they are in Genocide; soul absorption may be a thing humans are capable of, hence LOVE.
A monster is basically like your pet dog or cat but sentient, essentially.
Your soul is you. It's your essence. Your soul is what makes you who you are.
