She's TRYING to kill you. More than anyone else so far. She's DETERMINED to kick your ass back to the reset button.
Undying is her Determination state, so, yes.
She's the true heroine. The hope of the entire Underground, or at least what remains of it. She is very determined. And even before that she was one of, if not THE, most superlative warrior among the monsters. Most of the strongest foes in Neutral/Pacifist were holding back (Toriel TRIES to avoid killing you, Asgore WANTS to lose, etc)
If you decide she must fall. Bring one Sea Salt (faster movement to evade) plus the seven biggest healing items you can get. You may want to save the Pie for later though. And then practice, practice, practice until you "git gud" enough to not die to her. Lot of practice to build up muscle memory and such.
