How can people dislike Toriel?
Before you get yourself triggered, no, I am not a diehard fanboy/girl who likes to scream and force their opinions down people's throats. I am aware that many people dislike Toriel, and I accept that I have no right to get angry at what is someone's own opinion, but I genuinely don't understand the mentality behind hating her. Sure, you might find her annoying due to her motherly nature, but why do people get a sense of relief when they kill her? After all, she shows you nothing but compassion and kindness throughout the entire game, and anyone who says that she is 'sociopathic' because of the fact that she wants to 'kidnap' you is, well frankly, wrong.

Don't forget that, whatever age you yourself might be, Frisk is still a prepubescent child, and prepubescent children usually are not known for being able to live independently, especially if they would be surrounded by people who would stop at nothing to kill them. I, in fact, think it was irresponsible of Toriel to let Frisk leave the safety of the Ruins in the first place, but hey, the story has to progress somehow, right?

I can see why as people might take a dislike, but she's cool imo

People are not used to 'Mother-type' charachters in games, I guess. Each to their own, this is just like music. I know people who dislike Stairway to Heaven or Ode to Sleep.

While I certainly don't dislike her (I was one of the people who loaded the game after killing her having thought I just had to get her health low enough to spare her), I imagine at least some of the dislike (that isn’t due to her overprotectiveness) comes from her attitude towards Asgore in the True Pacifist ending.
To have even gotten to that point you would have had to expressed a lot of forgiveness to the monsters of the underground (not killing any of them, and even befriending some), so to have her be as unforgiving as she is to him is probably a bit jarring to some players (especially since she was the one who encouraged you to play non-violently).

Err... Remember that Asgore was literally about to kill you before Toriel intervened. I would hardly expect her to have a complacent attitude to what would have been Frisk's murderer, especially not only a few seconds after the incident.

And most everyone else had tried to kill you at least once by that point as well, whether intentional or not ("Froggit doesn't seem to know why it's here"). Undyne even remarks on this fact, yet Toriel's hostility seems exclusive to Asgore.
Again, not saying I dislike Toriel, I agree she's justfified in being at least a little peeved, I'm just trying to point out what reasons other people might have for disliking her (even if they may not be the best reasons).
