As for actual games (and not just single full battles) Undertale Red is the one I see referenced the most.
The Unitale Reddit should have several. Or just youtube a few fights and hope the player has enough basic decency to link the fight in their description.
For me personally? Only got Unitale recently. And haven't done any of the "major" AU fights or the fanmade genocide fights. Heard Alphys (the one without the robot, as there are two popular ones) and Mettaton NEO are suppsoed to be really, really good (and hard).
Out of what I have played so far in Unitale:
Combat oriented: "Save Goatbro" An end of pacifist fight versus plain old Flowey. I haven't won the whole fight yet as I'm a bit underskilled, both as I never attempted Genocide route and more used to gamepad , but I am digging the mechanics I have seen so far and have heard spoilers about a later part that should be awesome when I get that far into the fight.
Story oriented: "Shifter Simulator." Which was actually the reason I finally got around to even downloading Untiale in the first place. It's pretty much all storytelling based, as there are zero bullets to dodge, just a lot of ACT choices and (if you wish) the option to FIGHT. It's based on the aftermath of a "Triple Flowey Event" M!A (magic anon) from the flowey-answers blog on tumblr. Page 14-17 is the main part of said event (though some later pages and the sideblog hold relevance too), if you want context for what is going on and who is who.
