Gerson says that boss monsters age by giving their power to their children over time, so that as the child grows, the adult ages and eventually dies.
He then says however, that because Asgore's son Asriel is dead, Asgore and Toriel are pretty much immortal.
This is to explain how Asgore and Toriel have still been alive from when Chara first fell, to the time the game actually takes place.
Spelling error aside, I guess if Asriel wasn't technically a monster while his being was tied to the flower (I hesitate to say "soul" on account of both Flowey and Alphys both describing flowers as not being able to posess a soul of their own), then it makes sense for Asgore to remain at a fixed age if he has no son to whom he can pass on his strength.
But Gerson the turtle still claims Asgore never had a son, so the notion that Asriel isn't blood-related still holds. That is, unless Gerson did indeed have a senior moment or simply never knew about Asriel. The latter possibility might seem somewhat doubtful given that Asgore made a pretty big deal over Asriel's death, and Gerson was definitely alive long enough to have seen Asgore and Toriel living together happily (as indicated by his account of the "Fluffybuns" incident). But it's still possible that Gerson never knew about Asriel, if that "Fluffybuns" incident happened after Asriel's death and before Toriel left Asgore, but only if the monsters who knew about Asriel's death never interacted with Gerson or any of the monsters Gerson might talk to.
One final possibility is that, upon returning all of the monsters' souls, Asriel wiped their memories of him. Toriel certainly didn't remember very much of the final fight after Frisk woke up, and no one opted to fill in the blanks when she mentioned it.
On a side note, how did anyone actually know of Asriel's journey to the surface prior to his death if only Asriel passed through the barrier when Chara died? How would they have known whether Asriel didn't fight? Who would have told them if Asriel had collapsed and turned to dust upon his return to the underground?
