Undyne only befriends you if you kill no one, as she is one of the major checks for getting Pacifist. The one person you killed just also happened to be the one person that would have taken over after Asgore, and made the monsters be peaceful towards humans.
The training dummy doesn’t count towards anything, and Mad Dummy fights you regardless (you also can’t kill them unless you’re on the actual evil route).
Toriel can be saved in future Playthroughs by spamming the "Spare" Option during her fight. Accidentally killing her is an honest mistake and I even heard one YouTuber defending it as "Essential" for a Blind Playthrough, seeing as it can have a massive emotional impact. Ultimately, you were just following her instructions and trying to prove your ability to defend yourself.
Also, as mentioned above, the Dummy and Napstablook do not count towards a "Kill" Count or for EXP. At least, that is how I understand it.
All the way to LV 5? That sounds like you did the betrayal kill. Did she warn you about Asgore afterwards, or mention that you attacked her at her "most vulnerable moment"?
A Betrayal Kill is when you get a Monster to Spare you (Their Name turns Yellow) and then you attack them, instantly killing them. Toriel's Name does not turn Yellow if I recall correctly, but it is still possible to do a Betrayal Kill on her if you Spare her many times and then attack when she stops attacking you.
You tend to do more damage to bosses the lower their health is to make it more impactful. You decided to kill toriel, however you could have kept sparing her until she gives up, even though her name wasn't yellow. Also you have to kill asgore, but if you decided to do pacifist a new option will be available after doing the neutral ending. The mad dummy will always fight you.
The monsters you encounter are different from normal rpg monsters in that they eventually stop appearing as they are finite. If you decide to go "grind" and and kill as many monsters as possible you will enter a "genocide" route. And if you decide to kill nobody, gaining no exp or LV you will get a pacifist. If you do a mixture you get neutral which is what you get.
Even in Pacifist, she was still pretty hostile and dismissive at first. Even though I love the Cooking Lesson, I really do not like her... So I suppose the feeling is mutual.
I agree that it seems a bit silly for so many Monsters to react so bizarrely to the death of one Character (Who kind of dropped off the map for so long that no one even knows who they are anymore). If killing Toriel does indeed get you straight to Level 5, that does seem extreme for what would otherwise be a relatively "Neutral" Playthrough.
Still, the Game is very enjoyable and not worth dismissing based upon that alone in my opinion.
