Based on the fact that they let you name the first human making you think you're naming the protagonist, it really is up to you to decide what their gender is depending on what name you give.

I chose a feminine name viewing them as girls.

Frisk is technically genderfluid OR genderless, as their gender depends on what you wish them to be. I tend to view them as non-binary or feminine, but really it depends on you. When referring to them to others, I use they/them because they may view the character a different way.
