As for making the game easier, I don't think there is a way to do so. On my first playthrough I found the bosses hard too until I started getting used to their attacks
Unpopular opinion: Normal Undyne isn't that hard
PROTIP: Buy a Spider Donut while in the Ruins and keep it until the Muffet fight. It'll allow you to skip the fight entirely when you use it. And just saying, Muffet fight took me like 3-5 attempts on my first playthrough, so it's fairly difficult.
