i watched a preety convincing thery that on genicide YOUR the villian

It depends. If you get pacifist and stop playing after that, then it's Flowey. If you continue playing after that point then the player becomes the villain by not letting the characters live their lives.

Flowey is supposed to be a foil to the player, they represent how most people would probably play Undertale, helping people at first, but then wanting to know "what will happen if you did this", doing everything for completionists sake.

If you only play Pacifist once and never True Reset, you never become like Flowey, so he stays the main antagonist. However, if you give into the completionist idealogy within Undertale, you are considered the villain for taking your interests over the NPCs.

There isn't a real VILLIAN, really, unless you choose to go about doing a Genocidal path, then i would say you are the villian, but Flowey is the one who acts as the "bad guy" during the pacifist run, he has his plan that "isn't just regicide" so he could be considered the villian, because we know that he has killed every monster in every way in every timeline (unless there are infinite). but wait... how did i miss this? JERRY. JERRY is the true villian.
(JK, but still, jerry is terrible)

Well, don't the pacifist run and genocide run happen on alternate timelines (resetting the game after Pacifist to do Genocide)? If that's the case, I guess Flowey/Asriel is the villain of the pacifist run, being the person trying to destroy the timeline (but technically had deeper motives in the final battle which revealed the goodness within him). In the Genocide run, you are the main antagonist, being the one with no purpose other than the intent to wipe out all life, and eventually the game itself. That's my interpetation of it.

Well, if you want to get tecnical, just about everything bad in Undertale has something to do with DETERMINATION. sooooo, it's not a character, but... what do you think?

Evil doesn't exist, what we perceive as evil are actions that go against what we consider normal in our society, thus the definition and degree of what we call evil changes from culture to culture or person to person.
