If you get stressed while fighting her, you should also walk away from your computer and calm down with a 5-15 minute break. Taking a break will also help with focus, which is very important to being able to dodge her attacks. One thing I can suggest for you to practice with dodging her spear attacks is to look up "Unfair Undyne" online and play around with that to increase your reflexes.
Unfortunately, Undyne the Undying is only skill-based and requires tons of practice and preparation. The key to it is reflexes and a well-stocked inventory.
I'm not joking I tried beating her for days and a wasted an entire week for sans.
