What's wrong with Scott Cawthon?
I don't think I should talk about fan hate other game for random reason.
what if they add Frisk, but he/she is basically just like the Pokemon trainer, but instead of pokemon, the playable characters are Sans, Papyrus, and Undyne?
As cool as that would be, I doubt that would happen seeing as how they're only adding 1 character per DLC reveal.
Reason 1: Sans has more material for attacks, such as Gaster Blasters, whereas Papyrus would just have a bunch of bones.
Reason 2: Sans is more widely known as being related to Undertale. When I came across Undertale, Sans was the first thing I saw.
Reason 3: The HP problem could be easily ignored, as not ignoring it would cause imbalance and potentially be a spoiler.
I like the way you think
Mainly, he would be a massive spoiler for the genocide route, and while yes it's likely most will get spoiled about it anyway, you still have to think about potential newcomers that will get introduced through Smash.
There's also other things like, it doesn't fit his character at all to be in a fighting tournament, as he would likely see it as being ultimately pointless. He only fights when he sees that he absolutely needs to. You can make an argument with Isabelle, but she also doesn't have a character trait that directly contradicts the fighting tournament scenario. There's also what you pointed out, the fact that he only has 1 HP and that is a significant characteristic, as it's really the only thing that keeps him from being an overpowered Mary Sue.
If you know Sans, you know Megalovania, (or as my friends like to call it, the ‘Sans Song’).
With this logic you could argue that maybe, like, 1/3 of the Smash roster is fit for a fighting game? Mario/Luigi, Princess Peach, Yoshi, Diddy Kong, Kirby, etc. Normally, you wouldn’t expect any of these characters to be brawling it out.
Plenty of characters on the roster have been rebalanced to fit the game. Ex; Bayonetta is a god-killing, hundreds-of-years-old witch, but she isn’t as good as Pichu.
What about people in the future, those who didn’t see the memes?
Again, none of those characters have a specific trait that directly contradicts them being in a fighting tournament scenario, Sans does.
But there are better character options from Undertale, such as Papyrus, where this wouldn’t even need to be a factor.
Hypothetically, if an Undertale character were to be added, Sans would undeniably be the best choice. He’s the most well-known, and as others stated above, he has potential for an interesting moveset.

(I’m aware Quora isn’t the best source, but there isn’t a ton of stuff out there on the web about this topic.)
