Okay I just thought of this. We only see his stats on the genocide run, so maybe that has something to do with this? Its dumb but thats just a thought.

If Sans' health cap is 1 point, then it pretty much means he has no hope left. Just about anything, even a toddler, could kill Sans if they punched his skull hard enough or cut him.
