I'm more excited for the challenge than fearful.
Like Toby said, any of his future projects after Undertale would never be able to make you feel "that way" again; if this feeling is less prominent, then I'm sure he'll begin to compensate by the gameplay being much more demanding.
However, considering how Jevil is a secret boss, I'm reluctant to take his fight's difficulty as a trustworthy indicator for future encounters in the game; what I did consider, however, is that the final boss fight of Chapter 1 is a whole lot more difficult to beat than what you could call its Undertale counterpart, Toriel. If that's where we're starting off with, then the final boss fight of Deltarune has the potential to be rather insane in terms of difficulty.

I’m thinking the final boss for Chapter 2 will be the Queen that Jevil mentioned, and that she’ll be a Dark World version of Noelle’s mother/the mayor.

Seriously? I think I'd have much more chance of no-hitting Sans than Jevil!
Then again, I have only fought Jevil twice as of yet - with the first of these being completely blind - so I might get much better with practice.
Jevil has one distinct gameplay difference that seperates him from Sans: RNG. While there is a small amount of RNG seen within the Sans fight, such as the platform blasters attack, RNG is much more prominent within Jevil's fight. A majority of Jevils attacks are dependent on RNG. The OHP! OHP! OHP! attack, the diamond attack, the heart attack, the spade bomb attack, the club attack, the Chaos Blast, and that huge Devilsknife attack, they all have RNG. the only attacks with no RNG that I can think of are the spade spiral attack, the carousel attacks, and the devilsknife spin attacks.
This reliance on RNG results in a fight that is a LOT more difficult to no-hit than Sans'. However, Jevil is easy to beat with getting hit. the damage small and easy to heal, so its easy to get to the end of the fight. overall, to beat Jevil no-hit, you gotta COMMIT to learning every bit of strategy to fight him.
I agree that RNG is probably the biggest contributor to the difficulty of a no-hit run of Jevil - I can't simply learn many of the attacks like I could for Undyne the Undying and Sans; and, with those two fights, the bits that were randomised would usually be my bane.
If you've ever played VVVVVV, then I'd be inclined to compare it somewhat trying to get past the Gravitron in No Death Mode: the randomised segments were often my biggest problems there, as I couldn't muscle-memorise it.
