Even if it wasn't his only promise, it's still a huge favor for someone that lazy. She obviously has some sort of grip over him, considering how much he fawns over her during your dinner date.
Sans tells you about Toriel during your date to remind you that you'd be dead where you stand if it weren't for his promise. Not because he has a crush on Toriel.
The promise that he sometimes breaks.
