The humans out numbered the monsters. Step 1: Shoot gaster. Bam, no more "totaly eipc and cool rawr xd lasers" to kill them.
But guns run out of bullets.
And monsters run out of energy.
There are 7 million humans.
There are a little more than 100 monsters.
Not all in one place though, and we also don't see every single monster.
There are many instances of bullet dodging. Plus, if these lasers are light based it will travel pretty much instantly.
Ammo consumption outweighs energy consumption.
Trust me, I know from personal experience.
Oh, and the war was probably fought with primitive "1 round per minute" firearms if they were used at all. I am more inclined to believe, personally, that it was all bladed weaponry.
Billion* as of right now. The war itself was a long time ago. Long ago enough that it shows bladed weaponry at the beginning, at least.

Plus, with evidence looking like Gaster having a "blood" relationship (bone relationship?), it is likely that is so. If Gaster is even a fraction as powerful as Sans is, and let's face it, he likely is more powerful, the humans would geeeeeeeeeet dunked on.
Sans can manipulate gravity, throw hundreds of in palling bones per minute, is extremely perceptive, and can use like 30 Blasters at a time. I shudder to think what Gaster could do to humans with spears and swords.
Gaster invented the Core, which powers the entire underground. Could be possible one of his experiments went to augment his own energy.
Or he could just drink Monster energy drinks (see what I did there?)
Also considering how much punishment said child can take, I would not imagine how much time a correctly armored shell-shocked deathseeker could spend into a gaster blaster before suffering a scratch.
Lastly, no idea what the human tech level was during the war.
Yes, we do. We have a picture of Asgore+Monster Army vs Human army. All bladed weaponry.
Frisk/Chara had killed everyone in the Underground before encountering Gaster Blasters, so she was full of LOVE. Most humans wouldn't have had a kill count in the hundreds.
A human child can stand inside the laser beam for about 1.75 seconds before dying (The blaster can do about 20 damage in that amount of time, and you start with 20 health).
An adult could probobly survive for a little longer.
A single Blaster.
There are an unspecified number of them, for whatever that's worth.
