Stuck at Guardian Boss Fight

Hi,
I am stuck at the Guardian Boss Fight, normal difficulty. I can barely get past the first stage of hitting the bombs on his arm. The next part is the real problem. The horse is too difficult to steer. It stops when changing direction. Then the rolling bolder bomb is too hard to hit -- if I can even see it. I can barely hit the bomb and I am supposed to make the explosion hit the Guardian? It seems too hard.

I play with mouse and keyboard. (I have tried playing with a controller in another, similar game but it was too annoying for me.)

Pre-battle: Your equipment has to be focused only on DEFENSE, in other words, your damage can be 0, as long as your DEFENSE is high, you will not have many problems.
