Conquest is a thrill. Slow paced? No. The laning phase can be misconstrued as boring by the obtuse and unskilled. The tension of a well fought Conquest is a nearly unmatched gaming experience. The game is always PvP. You are ALWAYS fighting the enemy players even when you're not actively engaged in combat because EVERY DECISION MATTERS. ALWAYS.

I don't see a lot of people playing Kukulkan, but if you build him right (passive adds magical power based on max mp - get the Book of Thoth and farm minions), dropping your 3 then your 1 in the middle of your fight will weaken and slow people enough that your ult (which can hit 1k+ damage) can get you a penta kill.
I did that earlier in a Conquest match, came around from behind, had someone snare them, lined them up and obliterated the entire team.

He's only ~2500 favour, so he's affordable for a beginner as well.
Something about kukulkan that I just don't care for though. Like, what you would expect to be a nuke, just doesn't FEEL like one to me. I dunno.
Hunters are fairly easy to play but you have to mind your positioning. Mages are similar to Hunters in that regard, but use spells to burst rather than basic attacks to dps. Guardians have CC and can soak damage, but you can also be a bad Guardian if you don't know when to engage or are too scared to seize opportunities. Assassins are probably the hardest class, being fragile and usually very melee focused, excelling at hit and run tactics where they burst down enemy Hunters/Mages (ideally without dying in the process). Warriors are basically bruisers, not as tanky as Guardians but a whole lot tankier than Assassins - they can stand their ground on their own if need be, and take the solo lane for that reason.
Do note that "role" usually refers to something other than classes as others have pointed out. For example, Ao Kuang is listed as a Mage but will most likely take on the role of Jungler in a Conquest match; Loki is another good example because he's an Assassin that isn't used for jungling (like most other Assassins) but rather for solo laning.
Something most beginners will want to consider is that not all gods have escape abilities, which leave a little more room for human error if used properly. Of the 5 free gods you have unlocked when first starting out, only Neith and Thor have escapes (unless you count Guan's Ultimate).
Understandable, not every god is for everyone.
There's a certain setup you need to really be effective with Kukulkan, otherwise you'll run out of mana in roughly 10 seconds and get annihilated because you can't protect yoursellf or use the speed buff to escape. Plays like an assassin/mage hybrid thing, very squishy.
Back on topic, a mage might be a good class to start out with. Pair up with someone and learn a thing or two as well as helping out.
Only problem might be playing support in Conquest, learning all the smaller parts of the game (warding, rotating etc) will come with time, but are important in that mode (probably the main one for that really).
You can always do Jungle Practice to test out any god you want, wait for rotation to test them in actual matches, or get like a 24 hour trial (I've had to do that a couple times, but it was worth it for Thanatos and Kuku).
Right now EVERY god is in rotation so you can test whatever you want.
Anhur is pretty good. Underplayed IMO.
I rarely see him. Most hunters I see are Neith or Artemis <.<
Most people can't play him anyway.
